Your Minecraft ping in the USA depends on which side of the country your players are on, because no single region is close to everyone. A packet from California to a server in US East has to cross the whole continent and come back. Under about 50 milliseconds players notice nothing, while above 100 milliseconds they feel it in combat and when moving fast. That is why the choice between US East, US Central and US West matters more than the host: put the server in the region where most of your players live, or in US Central when they are spread from coast to coast.
